Admin menu > Orgs and People A-J > Gender.
The Gender page controls the drop-down list used by the "Gender" field on the Details Screen.
You can alter existing options, or add new ones by clicking the plus symbol at the bottom, then typing in the space. Once you click "Save details", the options in the drop-down field will be updated to match this list.
